 Perhaps IPers would like to compile a list of what's local and/or good 
at which airports.  If you have time in the options Declan suggests 
will work.  If not you're stuck at the airport.

 At Kansas City International (KCI) I'd recommend Gates BBQ which has a 
storefront in at least one of the buildings.
